This Banana Bread is Bananas, B-A-N-A-N-A-S

Everyone has their standby Banana Bread recipe that they either got from mom or grandma, or their sister. And then there are those that don't have a recipe at all! Danh dunh DANNN!!! Yes, they do exist.

I feel sorry for those poor souls, lost in the world without any clue on how to take those overripe bananas, just short of fermenting into a liquor on their countertop, with fruit flies magically appearing from thin air and whizzing drunkenly all around them. They  do not know that they have the power of transforming that hot mess into something as glorious and delicious as Banana Bread. 

But in the words of Mighty Mouse, "Here I come to save the day!!" I am here to show you the way of the Banana Bread folks.

First of all here is a neat trick for those of you constantly wasting bananas. If you are constantly missing the mark of getting those bananas into banana bread because they turn completely black, mushy, and putrid before they are used, try this!

When the bananas are fully ripe, toss those suckers into the freezer! YES! The Freezer!! Put them unpeeled in a freezer bag in your freezer for up to 3 months. 

Do it, and when you are one day in your Zen space, with time to spare (hah!), and you feel like getting all "bakey" in the kitchen, take them out to thaw and throw them into any recipe you like. Great for smoothies too by the way, but I digress.

Recipe-Banana Bread (Makes 2 loaves)


Ingredients: 


4 Eggs
4 Cups Flour
1 Cup Butter
4 Very Ripe Bananas
1 3/4 Cup Sugar
2 Tspn. Baking Powder
1 Tspn. Baking Soda
Pinch Salt

Instructions:


Preheat oven to 350 Degrees F. Grease 2 bread bans, I like to use butter for my greasing and to then dust the pans with flour. 

Blend your wet ingredients first, Bananas, Butter, Eggs, with the Sugar. When creamed together into a smooth mixture, add your remaining dry ingredients, Flour, Baking Powder, Baking Soda, and Salt. 

When well mixed, divide into pans and bake your loaves for 55 min. 

Note: If you want to make this recipe for Banana Bread Muffins, bake instead at 400 degrees F, for 20-25 minutes.
